Mauro and Catia Uliassi
We are siblings, born and raised in Senigallia. We opened Uliassi’s doors on May 27, 1990. It was a Sunday. Back then, the restaurant was little more than a seaside shanty, but set beside where the river meets the beach, it was perfectly charming nonetheless.
We and our friends were a gang of young kids, playing at being restaurateurs. We hadn’t yet found our niche, our identity, whatever it was that was going to set us apart, but we had inherited from our grandmother, Jolanda and from our mother, Bianca, our fine palates. And having grown up surrounded by the regulars at our parents’ coffee shop, we developed a knack for good hospitality.
Starting out, we quickly realized that our customers took to the way we interacted with them as well as to our cooking. There were lines out the door for lunch and dinner every day. When Ivano Coppari, who is still with us, arrived a few months in, we added tables to the dining room. People were everywhere! Our pioneering era was great fun.
Slowly but surely
What started out as sort of a game to us became a concrete reality.
Today we have an amazing team of more than 35, and Uliassi is literally world famous.
Contributing invaluably to management of the dining room for more than a decade are Filippo Uliassi and his partner Elisa Cao, who oversee service and our team of waitstaff.
Mauro Paolini runs the kitchen and leads our gang of cooks. Every year, his vision, along with those of Luciano Serritelli, Jury Raggini, Andrea Merloni and Mattia Casabianca, incorporates new experiences and skills, helping the restaurant to continue to flourish.
We follow the same approach as we did 30 years ago, one that revolves around curiosity and enthusiasm, qualities we see as the driving forces of excellence. The restaurant is still our home beside the sea where we welcome our guests and care for them like family.
We don’t tend to dwell too much upon the past, but, when, from time to time, we do look back, it is never without gratitude for those who have helped us get to where we are today.
